My Sanity...Cooking Creatively

I know that most people do not enjoy cooking, but for me, it is my sanity. I look forward to standing in front of the stove, simmering a meal that hopefully my daugher and husband will enjoy. I love coming up with new recipes, scrounging thru the refridgerator which never seems to be full enough, adding random spices, and then poof...a Creative Food Masterpiece..sometimes.
I have to say that last night, I hit a home run. I found some yummy looking ravioli's from Trader Joes in my freezer. Now what to pair it with...I am all about having a 3 piece meal: starch, vegetable, and a protein. I can't help it, I think my mom installed this in me.
So in my fridge I find spinach, some left over pumpkin puree, an onion, a bit of half and half. I check out my pantry and find some canelli beans. And just because the ravioli's just don't look like there is enough, I add in some butternut squash. Hear we go!!!!!!!!!!!

Butternut Pumpkin Pasta
1/4 cup cream
1/2 onion
1/2 butternut squash
1/2 small can of pumpkin puree
1/2 bag of spinach
1 package of ravioli's
1/2 can of beans
3 garlic cloves
2 tbsp of honey or agave
to taste salt
to taste pepper
to taste cinnamon
to taste nutmeg
Saute the onions, garlic, and squash until brown. Add beans and cover with spinach.
Once the spinach is welted add 1 tbsp of honey. Mix and keep on heat.
In food processor, add pumpkin, half and half, and honey.
Puree.
Cook Pasta.
Add all ingredients into one dish and keep until until serve.
ENJOY!
